Matza baking before Passover is done both commercially and privately. For private baking, groups (chaburot) get together and bake the matzot within the strict time limit of 18 minutes from start to finish. There is much satisfaction in having baked one's own matzot, as well as the guarantee that they were produced according to halacha.
